bread recipe from King Arthur
mojo pork recipe from Serious Eats. I made a 9lb shoulder, so I vacuum sealed half of the meat and froze it.
Pretty satisfied with how the bread came out.
Kendrick has forever made making sandwiches more enjoyable. Not pictured, buttered the outside of the bread before assembly began.
Pickled jalepeño, pickles.

All done. I saved half of this for later, it is a pretty hefty sandwich. Not pictured: I also made some pretty excellent black beans on the day I made the pork, will probably have a cup of those with the leftover half-sandwich for dinner or something.
Notes: I would try something different for a spicy note. The pickled jalepeños were good, but not quite right. Earlier in the week I had pickled red onions on one sandwich and liked the sweet note that added. I don't get enough excuses to use the grill press, this bread was just the right amount of sturdy but squishy. The cheese did a great job functioning as glue to hold everything together.
Bonus unrelated photos. A new coffee/tea mug I just received as a gift. Has a steeper basket. I had a nice roibos chai. I like the wooden handle.
